Already mentioned MT Baja Boss (255/85R17) and Kenda Klever (35x10.5) so I'll just say that flaps are really the way to achieve reduced rock-throwing.
Even skinnier tires will still hook rocks up the side without them on your Sasquatch offset wheels.
Not sure how much "a lot" of snow is but the flaps are also really good at cutting down the slush and grime from dirty sanded snow on the roads.

Stellar tire and that size rules in the snow. I’ve had several sets in three different sizes on three different trucks.

Just a note on rocks hitting the windshield on ANY bronco.

The bronco tends to throw rocks out the front more more than any other vehicle I've owned. I run into my
own rocks on a regular basis. Some even end up on my roof/hood, and I have VERY large and wide RokBloks flaps.

Thinner tires I doubt will help due to the large gap between the bumper and the body right where the tire "tracks" behind the fender.
