I have the Modular with some lights in the pockets and the Everglades winch mount - it's an attractive way to go, but the OEM winch kit is sold out and becoming hard to find.
Aftermarket winch mounts are available for both Capable and Modular and may be functionally better (or worse) than OEM.

Is a trailer realistic for your use case? For stuff that big, I'd rather tow it. There are a lot of ready-made "rugged" trailers out there now, or you could DIY with a surplus military unit. Something with a long and low tongue might even let you get in the back door still.
You will want more than a 2" drop but with like a 4" it's no problem. I have never used an extension or removed the spare to tow. We're pretty tall and Uhauls are pretty low on the nose anyway so they'll take the drop just fine.
