Mine is, as well. My dealer has said they usually tell folks delivery is ~30 days out from the build, but rarely has dragged out to 60.

WT week of 1/08. I called yesterday and they said my WT is set to be built on 1/12 but it shows 1/08 on my tracker so

The tracker calls out the week, it is within the production week starting on Monday 1/08, whoever you called (dealer or Ford) gave you the more precise date of 1/12. So they are both correct.

Is it normal for them to start building on a Friday?

The build does not start on Friday, they assemble the vehicle on that Friday, but they start putting components together the week before.
