If wanting to keep the shut off, remove male plug, install threaded female plug from harbor freight.

If you don't care about the shut off, remove male plug to it, insert other male plug into female coupler.

That would be this one yes?

And what exactly is the shut off for? Its my understanding that to stop to check the pressure, you just use the collar on the manifold (above the shut-off switch section) after stopping the compressor. Is that right? Or is that open/close slider only for deflating?

Yes, that would be it. Maybe look at the purple colored ones, as those are 'high flow'. Would be better use for deflating.

As for your other question, ive got no clue. I don't have one, just offering a solution to the issue.

Looks like you have one of the 300 LPM jobbies? Easiest method is to clip off the Asian coupler and use a barbed automotive style coupler. If you choose to use a threaded coupler be ready for the compressor to have M10 threads that will have to be tapped to 1/4 NPT or adapted to it.

uhh what?

Harbor freight worked just fine, literally screw out and screw in (with PTFE ofc)
