I just went through this same decision. I ended up buying 4 D rated Toyo OpenCountry Trails to replace the paper thing GYs. Since one of them only have about 1k on it, it's hanging off the back of the rig as a 'get me home' tire now should I need it. I bought the maintenance plan and the dealer only does 4 tire rotations, so that problem's now solved too!

The Toyos are actually smoother in the rough stuff so far, which supersized me given the higher load rating and thicker sidewalls. After replacing 2 GYs from getting punctured on what is little more than a passenger car road with some small rocks, I decided to not but any more.

I'll have to check the date code, but I'm not worried about a tire that's a couple of years old. Tires with 50-80K warranties are expected to last a number of years. There were no visible signs of the tire showing any aging. If I had to buy 5 tires, I'd surely choose something different, though.
Here in AZ 6 years is the rule for most tires aging out. Pretty much every RV/Boat trailer needs new tires long before the tread wears off.

Not sure where you are located but a lot of places have buy 3 get 1 free on tires. I’ve seen a lot more dealers doing it and if you have Fleet Farm around you they do it as well. Might be more limited in your tire selection though.

I hadn't thought about just sticking with the Goodyear as an emergency tire and not bothering to rotate it. That will close the gap in price when buying four better alternative tires rather than five.
