is there someone who knows what the oil temp should run at? I have the 2.3 and a simple google search seems most vehicles oil temp should be 230-260 defrees, or so? i read that temp helps cook out excess water etc, seems to make sense, however, my oil temp is rarely above 205? Thoughts??

You talking trans oil temp? There are two gauges on the Bronco, engine coolant temp and transmission oil temp. Trans oil temp of 230-260 is hot and fluid will start to break down at the higher end of that range and above. For trans temp in the 10R60, documented operating temp is 206-215. 180-215 is a good place.

Cooler trans temp is usually a good thing, cold not so much so it does need to be warm for best fuel mileage and operation.

You should not have any water in the oil, either in engine or trans. Water doesn't compress and is terrible inside an engine or transmission (strawberry milkshake anyone).

In cooler ambient temps I wouldn't be at all surprised to see the engine oil temp in the 200 to 220deg range.
First I've heard of "cooking out" water etc. If there's water in your oil you have much bigger issues.

I remember talking to a trans shop when I replaced my auto trans in my 90 Bronco full size. I moved to a B&M trans cooler and asked if going to the next size would overcool the trans. The shop replied honestly you can not cool a trans too much...get the bigger one.

My engine oil temp and transmission oil temp are both reading around 195 when everything is warmed up. I'm sure those numbers will go up in the summer.

Yes and no, there should be no water in your oil but there may be a small amount of condensation. If you drive frequently without getting your engine up to operating temperature, that condensation will not vapourize and be sucked into the engine through the PCV system. It can accumulate and will create a milky looking film (about the colour of the inside of a Milky Way bar and the texture of meringue) on the inside surface of the valve cover. This is extremely uncommon on modern vehicles.

im pretty sure its oil temp, not transmission, its the gauge that looks like the normal oil pressure symbol but the gauge reads in degree's and the water i suppose in the article i read they mean water vapor or very slight amonts, of course i know "water" in the oil would be bad, hence i was wondering if this temp is too low, however, i read another article from Mcnally institue that stated between 190 and 220 so i suppose im fine, thanks for the help though.
