I've read different views on catch cans on this forum. I put dual catch cans on at 300 miles. This is what my catch cans have caught at 12k. Glad I put mine on. To each his own.

Mine looks the same way every time I check it. And I drive 35 miles each way to work. So it has nothing to do with short drives. It’s just blow by from normal driving.

People can claim catch cans are not needed on a 2.7 all they want. And they’re correct about not needing it to keep the back of the intake valves clean, but there is no doubt it can help in other ways by keeping all that nasty crap out of the intake, intercooler and CAC tubes which is where most of that would normally collect.

You are getting water/oil mix in catch can?
What does the underside of the oil cap look like?

Like the normal underside of an oil cap.
Where are you seeing water?
What’s in that can is a normal amount of oil from blow by.
Water and oil don’t mix. If there was a concerning amount of water, it would clearly separate from the oil in that glass.
