For my 2-door rear seat delete, I eschewed the wood and expensive Goose option in favor of a $40 thick, heavy horse mat from Tractor Supply. After removing the seats and faking out the sensors, I cut the mat to size and drilled four holes in the mat to accommodate the long bolts pressed in from underneath. The bolts fit snugly into the holes and hold the mat firmly in place, and terminate nicely just below the surface. It's grippy and washable. Everything lays flat. It looks and works great. The bolts are protected, it's lighter than the other options, helps reduce road noise and everything is easily reversible.

I would love to see pictures of your install.
I'm having problems posting pictures. If you can see it below, the mat is cut to size and trimmed around the seat belt bases. You can see the four holes that fit over the bolts. I just used a jigsaw and a drill to do all the work, with careful measuring. To precisely determine where to drill, you can moisten the top of the bolts with a magic marker, then gently press the mat onto them. Update: managed to upload the image by reducing its scale, changing it to a .gif and using the attach link.
