I have almost always let it warm up enough for the idle to come down to 900RPM, but it's rarely up to full temp before I start driving. Every time it's happened to me the engine has been warm but definitely not all the way warm, but I don't know if that's just because of how I usually start it out.

Great point about the gearing and desired usage. I'd take it a step further and say that (if you're not planning on getting the base) for the difference in price it's probably a better investment to get the 2.3L with the rear locker which kicks your gears up to 4.27 than it is to get the 2.7L...
