Yes, the rears don't get a full range signal as you said. However, with a DSP, like the one in the JL amp he has, you can route the full range signal to the rears without messing with Forscan.
With the base system, this is one of the simplest installs possible. You might want to find a different place. Or do it yourself. You don't need harnesses, Forscan changes, or anything out of the ordinary to overhaul the base system.

Yes, a small minority have gone with something other than the Kicker Key.
I like option 1, should sound great. In option 2, I don't think you gain anything other than difficulty tuning it. Even if you use a DSP and go fully active, why do you want multiple co-axials?
This will be miles better than the stock system. If you want unsolicited opinions, you are putting some good speakers in and powering them with budget amps. It seems to work fine for everyone else, but the speakers you are considering are pretty nice. Also, I would swap your 6.5 Audio Frogs...
