Honestly paint looks like the way to go. The letters are recessed, and it may be hard to put a vinyl in, but paint is going to naturally fill the area while staying level.

yes paint is the way to go. Vinyl will not look good because as you stated the letters are recessed. Unless there are thick decals that can fill the space until level with the surface.

Bronco on the dash is recessed as well, and while its painted code orange, stickers there would look the same

As Far as the colors is looks like the Standard Gloss White and Gloss Red from Testors (I manage a Hobby shop) if you are doing a search Look for 1145 Gloss White and 1103 Gloss red

The dash stickers there don’t look good to me either. If it’s not flush with the surface it looks off/cheap.
