This might sound like a dumb idea, but down here in the Southeast, I think an offroad/overlander/4x4/rock crawler themed restaurant would do awesome. Need like 50 of the best local beers on tap, some great burgers and apps. Sell a lot of ford/toyota/jeep, etc. merch. Have a full blown aftermarket shop and upfitted garage bays out back where you do installs for people while they have a beer and a burger. Be the place for meetups, do offroad adventure route planning with big groups, TV's streaming all kinds of offroad content. Effin' rigid 360's for lights above bathroom mirrors lol - I don't know, get creative. Make it a place to drink and eat, but also to build and learn.

That's similar (and a nice place), but what @Hummell is describing is more like an off road shop with a restaurant wrapped around it. I want to say there's something similar in Utah but not sure.
