What do you mean by "off road"?
Been reading some posts and it seems some are meant for pavement. Thinking it must be a stability thing. Not sure. I would primarily only use it for trail riding/rock climbing. I have never used one so I’m a novice in the dash cam thing.

Are off road dash cams just regular dash cams that have been reinforced to survive considerable shocks from potholes and washboard roads?

Well if it is a Dashcam it will be inside the car so won't really be exposed to elements unless doors/roof off/windows down and wet or dusty.

The traditional dashcams are not water proof and if vehicle hitting a hard bump/impact will save footage before and after because that's what happens during an accident. You can set these dashcams to have high, medium, low or no sensitivity to bumps/impacts. For example if going off road I would turn on no sensitivity so camera does not think you are constantly getting into accidents. With the traditional dash cam you can also set it to record and save all the footage from the drive.

A true off road camera is a go pro but does not have many features of traditional dashcams such as impact recording and parking sensor modes. Go pros can also be mounted outside of vehicle and a water/dust proof.

Literally any Go-Pro like video camera with a protective housing on it, mounted wherever you want it on the outside. The "shakes" are taken out by OIS, Optical Image Stabilization.

I just use a waterproof/shockproof camera. Works great and I can use it for snorkeling and other outdoor things as well

I wouldn't go beyond a GoPro or Insta360 and both can serve as an off-road cam mounted to the dash in any number of ways and each can take a beating and water and dust proof.

True dash cams are not made to endure elemental abuse.

What are your usage plans? Are you wanting a true dashcam to monitor activity around your Bronco while driving and/or parked off-road? Or are you wanting a camera to mount to your dash to record off-road adventures? They really are two specific use cameras and while one can be made to do the other, it won't necessarily do it well and results will vary.
