Very little in New York state. Single-track here and there, but 4x4? Eco-zealots have had their way, even in the Adirondack State Forest. In Connecticut, Rhode Island, and most of Massachusetts there isn't much, just because...there isn't much.
On Bronco6G, join a club in the region you'd like to explore. I don't know about eastern Pennsylvania and New Jersey, maybe clubbers there can direct you. Here we have New England Broncos.
Near your area, Northampton MA has the "Ma Bell" (Mabell) trail. I'd put it at 3 out of 5 on difficulty. Sasquatch lift can handle it okay, lower lift with a spotter. Stay on trail, don't leave anything behind--locals are very protective. 3-4 hours, up and back. Then find a pub in hip Northampton. Much more challenging is Old Florida Road in North Adams--only for experienced off-roaders with Sasquatch or better.
In Vermont, look for Class 4 roads; in New Hampshire, they're Class VI. These are legal roads which have been abandoned by towns and counties, no maintenance, so you don't know what you're in for: washouts, rock slides, deep mud, downed trees?
The Delorme Gazetteer is a good place to start, and it's owned by Garmin with their on-line and satellite maps.
oNX and Gia subscriptions will give you more.
On Facebook start with Northeast Bronco Nation, which is more active in group activities. There's also Northeast Bronco 6G, but that site is more what I'd call "life style Bronco," i.e. fan stuff.
Search for 4x4 and jeep clubs in the state or area you're considering. Maybe you can join a group run.
But for winter reading, get the VT/NH Gazetteer, and look over New England areas you'd like to visit for scenery and activities. Then use the Gazetteer and see what's mapped with those two parallel dotted lines, which signify "unpaved road."

This is very short notice, but if you can make the first weekend in October--three days--in and around South Royalton Vermont. A bit north of White River Junction

This is Friday to Sunday, but you want to arrive Thursday if possible to get a good campsite. This is an all-types off-roading extravaganza, for everything from newbies just getting acquainted with their Broncos to soccer moms in their landrovers to more ambitious types with some experience to really aggressive off-roaders with very serious rigs. Trails and Class IV roads are checked by the organizers and rated from 1 (yeah, your Subaru can handle this) to 5 (serious lift, winch and recovery gear are a must).

You'll need oNX mapping on your phone/tablet: they map and color code the routes. A free trial subscription will suffice.

No camping amenities except chem toilets: bring your tent, RTT, and everything you need for food and camping. Lots of great comradery. Dogs and children have a blast. With you and other Forum folks in mind, I called Derek, who organizes this. He said it's theoretically sold out, but a call later this week and he'll probably fit you in to somebody's cancellation.

Call Derek (802) 324-3370. It's Oct 4-6, but try and get there Oct. 3. Call in sick Thursday and Friday, wherever you work, you're not as essential as you think you are, and be there. If you do, PM me and we'll connect.

Check out the BDR route for the north east. It stretches from New York into Massachusetts, Vermont, New Hampshire, Maine, and ends at the Canadian border. It’s broken into segments so you can pick and choose which of the segments you wish to travel. Their website has downloadable files that are extremely helpful included with waypoint For gas food, lodging, and points of interest. I did the mid Atlantic BDR earlier this summer and it was a blast.

I just wheeled Anthracite Offroad Adventure Area (AOAA) in Pennsylvania this past weekend and it was excellent. Good assortment of trails from easy greens to sketchy greens through black trails that'll eat a custom buggy. 8000 acres of beautiful, well maintained, well marked trails.

They even have an associated campground that's well thought-out. Again, excellent.

Go on tristatebroncos.com or FB we have rides in the NY/NJ area few times a year. It may be doable for you IDK where in NY you are.
