I get the cup-o-coffee message when I’m looking around at scenery and stuff out the window. I’ll grant, however, it is usually near my destination after a while at the wheel.

Help me with this: I’ve been told one of the sensors in the interior mirror detects eye movement and uses this to check for eyes on the road to give these alerts.
I don’t trust much of what I’ve been told anymore; has anyone heard of this in 2025 Broncos?
The only cars that watch you for eyes on the road are self driving, Ford calls it Blue Cruise. It is not available on Bronco. The Cup of Coffee warning comes from wandering in your lane. It doesn’t take much movement in the lane, but certain kinds of steering wheel movements seem to trigger it.

No way 10... 2.... hand position means anything unless I've somehow turned it off on my truck. I had rotator cuff surgery back in November. Been driving one handed ever since, as im still in a sling. Never received any warnings and my daily drive includes 30 miles highway driving.

No, there aren’t sensors in the steering wheel to sense hand position. The ONLY way the system knows if you have hands on the wheel is by sensing torque applied by the steering wheel to the steering gear. If you get the hands on the wheel message, a very slight movement of the wheel in either direction from any hand position will turn the warning off.
