I don't know Santa Cruz that well, so I'd say roll down to Carmel/Monterey Bay/Pacific Grove. Truly beautiful views, and you have Point Lobos nearby (not sure if you can get near the water in your Bronco...) and then of course Old Coast Road:

Pacific Grove also has Fort Ord Sand Dunes State Park, but I suspect you can't get near the water there, although there might be an overlook.

Past that, everything I'd have to suggest is near Half Moon Bay/Pacifica/north bay.

Your money shot is on the 17 Mile Drive in Monterey. Located just off Highway 1, it is a private scenic drive requiring a modest entrance fee. There are several picturesque photo ops but the best ones are located directly on the shoreline across from one of the many golf courses therein, with several spots to pull off and take pictures. The area has some of California's most extraordinary ocean-side scenery. While you are on the Monterey Penninsula, visit Pt. Lobos which is a beautiful section of the coast. Oh, and be sure to post the photos here!

This spot in my profile pic makes for a good photo op. Coast Road is extremely mild (you could make it in a Prius) but at least it's dirt and Big Sur is 100% worth the drive from Santa Cruz if you have never been.

Go north to Waddell beach for photo and kite surfers…may also try rio del mar beach, sea cliff will have a fee and can’t always drive below the cliff …ya can also go out on the wharf but ya won’t get the sunset…if ya want to drive to Pacific Grove there is ocean view blvd….after that hiway 1 to Big Sur is full of great views…pretty sure the coast road is still closed and the ocean is a long way off…enjoy your visit!

17 Mile Drive is in Pebble Beach. It is all right there of course, but hopefully people can visual where Pebble Beach is and that's the road around the neighborhood. Definitely some of the most beautiful coastline. Just not sure if you can get a money shot with a vehicle, however going around Pacific Grove and Carmel etc. on the shoreline road would have to have something.
