This^^^ And while you're at it change out all of the fluids, i.e. transmission, rear end, radiator, and of course the oil. At 40 years old it will need all of that. Oh, and don't forget to change the fuel filter. I know your Dad will enjoy seeing you fix his baby up. It's gonna cost you a little, but worth it in the end. To answer your specific question I recommend always replacing the brake pads and rotors. Always replace both together. Or at a minimum get the old rotors turned along with new pads although if the rotors get too thin you risk warping them resulting in pulsating brake pedal.
Remember to put the anti-squeal compound on the back side of the pads when you install them. And I'd recommend lubing the brake caliper slides too and check for broken seals, etc.
Brake jobs are easy and don't require that many tools. Just read and read some more. Shops get such big bucks for brake jobs and I can do front or rear for usually less than a hundred )parts), including new rotors.
