They do on the 2-door, The 4-door seat cushions slide down into the footwell horizontally and the seat backs fold flat on top of them. You can see the seat bottom on the passenger floor in this pic.
Keep in mind, no matter the 2-door or 4-door, the headrests are designed to fold backwards when folding the seat backs, but you can also remove them if you want. There’s a lot more room in them than I thought there would be.
No that’s with seats inside. If you want a sleeping platform, the tailgate tray will level it up and you’ll have 6’ at least. More if you slide the front seats forward.

I have a rear door like this on my Lexus. I didn’t know if I’d like it or not when I bought it, but it really isn’t a big deal. I don’t even think about it anymore.
The 12” was at the top of the seat. There’s a lot more room than in a 2-door wrangler, and you can fold down half of the rear seat to add more space while still having a seat in the back.
I measured a 4-door tonight, from the tailgate to the back of the drivers seat in a driving position, it’s just about 6’ long. I didn’t measure the width though. The pic isn’t great, but I lined the end up with the back of the driver’s seat.

Yes, it definitely seems like it changes color but very subtly the sun was going down so the lighting changed quite a bit in 20 minutes. It’s a great color, so I’m guessing it will be everywhere when they’re delivered.
So I found the test mules tonight. For those of you interested in sleeping inside, the 4-door measured about 6 ft between the inside of the tailgate and the rear of the driver’s seat. I would guess you could move the driver’s seat forward another 6-8” and have plenty of room to take a snooze.
