What it's worth is subjective though. And @Rahkmalla put it best. Why would someone spend $2k on your wheels and tires when they could've ordered them from the factory that way? They could get exactly the wheels and tires they want for around the same price or a little bit more.
Your dealer 99ed your order and didn't tell you, or it was never un-99ed if you had originally selected Mod top or dual tops. I seriously doubt Ford would renege on building all FEs in 2021 and build other lower trims with later reservations instead (such as mine).
I actually get worse mileage in eco mode in my Explorer in the City or in stop and go traffic. If you're steadily maintaining speed, it might get slightly better mileage in eco but the difference seems negligible.
