I'm considering putting somewhat of a pizza cutter on the stock Sasquatch, it'll bring the wheel about an inch into the fender, but I'll could be putting a 1" spacer on it to extend it back out.

Anyone do anything like this before? I searched and couldn't find anything but winter tire setups.

I'm contemplating these, but leaning more towards the skinnier C rated tires to have more flex when aired down, lighter tires, less road noise, and better on road performance:

I scratched off the wild peaks because they're too heavy. KO3/KO2 are possibly too loud/hard to balance, and too poor in wet traction.

Am I missing any other options that I should be considering? Would stepping down to 285/70 be too small for Sasquatch?

I'm personally looking at the Mickey Thompson Baja Boss AT in a 255/85R17. That's super skinny - a real pizza cutter - and might be too skinny for your purposes. I have a non-Sasquatch Badlands and I'm a-okay with reducing my track width a bit.
I think they're only available in E range, but the skinniness does seem to lighten them a bit. 64lb a corner.
For what it's worth, I love my KO2s. Their quality is the main reason I haven't moved to buy new tires yet - couldn't bear to throw them away, even if they're "only" 33" in my case.

My stock (really worn) GYMT are so loud compared to some Bridgestone duelers ATs that I have tested, that I want get rid of them asap at this point. It's not just a constant drone, but it's hitting higher pitches that's getting annoying. I'm glad your KO2 are still doing good for you, but I've been thoroughly traumatized by now.

Mickey Thompson 285/70R17 are SL rated, coming it at 48 lbs is not a bad tire too. But I kind of want to keep the 34" height to give the illusion of a skinnier tire and at the same time fill in the wheel well more.

I'm curious to know if there's any Sasquatches out there running 33's on their stock wheels and see how it looks.

A 1" narrower tire will only move the shoulder of the tire in 1/2". Also, the stock Sas tires run narrow, so you may not notice a difference going to a 285 that runs wide.

I've only found the Open Country and Firestone that are C/D rated for the 285/75R17 that have reasonable weights. Any other ones I should be considering?

I am also looking to upgrade my stock OBX wheels/tires. Wildpeak AT4Ws are heavier across the board. Looks like the Toyo Open Country ATIII in 285/75/17 C rated will be the winner here.

Seems that way. I've heard that they can be bad in the wet, but that may be the Load range E ones. Also see some say it wears fast, but if I can get 40k out of them, I'll be happy. Rather 40k in comfort and performance than 65k and going deaf!
