I did both Texas and Moab. Both were excellent but Moab had probably 3x the seat time. Also, the high speed course in Texas was limited to about 25 mph because we were told with the lower air pressure in the tires the beads might pop. I signed up for mid March Moab, but I might want to just hit the trails in my own Bronco if this is the program...after watching various youtube videos I was thinking it all might be too intro for me in any case.

Yeah, I felt like we had plenty of seat/trail time. The morning demos of the different features was good too. I learned quite a lot from those demos.We had zero class time unless you count walking around outside while different student demonstrated the various features. I think the format has changed from what I have heard. It is now a one-day class, and they feed you lunch and dinner.
Answer varies depending on location/circumstances, but here in the desert SW "the" answer is probably water - enough water for everyone to be able to hike back (in hot conditions) to civilization in case of a vehicle break down...What's one piece of gear you can't go off-roading without?
