Dang you guys are inspiring. And a bit intimidating. :LOL:
I can open/ Standard grill like mad.
Got a Traeger this spring, still learning how to use it effectively. It's definitely different.
I got bags of the mixed pellets. They put a good flavor in the meat but I think I am going to experiment with single flavors a bit for a more specific smokiness.
I don't use it as much (maybe 1 time to every 20 times regular grilling) just due to either time or not wanting to take a chance on messing up what I know works.

Try Lumber Jack brand pellets, if you haven't already. They seem to me to give the best smoke taste.

The griddle side is what I'm most interested. I use a skillet now on my grill, just because that's what I have, but in can be a bit cumbersome.

It wasn't quite a chimichurri but pretty close - I'll see if I can grab the video with the recipe and post here. I did find a very good chimi recipe and I try and keep the recipes that I really enjoyed for future cooks.
