May be a dumb question but I’m curious if feeding the kicker key 500.1 from only the left front speaker via speaker level inputs would be limiting my overall input signal vs taking from both the left and right front speakers. I have it bridged going into the connector at the amp (ie. both the left and right amp input positives connected to the positive signal and the left and right negatives connected to the negative signal)

I saw a YouTube video where the guy does this with the all in one down firing amp/sub from Kicker. He taps each of the two wires twice and feeds it into an RCA connection but it has me curious if I would get more input signal by running wires from each speaker instead

It's not clear what you are asking. WRT to sub feed . . . there will always be exceptions but, for the most part, feeding a sub input from the output to only one of a pair of front speakers will provide all the signal you need. If you can easily add the "missing" channel back into your feed and it's something you want to do, then by all means; if not don't fret it.
