Sounds like the kind of thing that is planned many years in advance. The kind of thing where all customers would have plenty of notice time to find alternative sources.
Based on the Ford VIN documentation I linked to, at 6 digits you'd only be distinguishing between Broncos based on GVWR.
If you pushed it out to 8 digits then you'd have a much richer data set including things like engines, transfer case type, and number of doors.

What are you defining as "trim"? When I think "trim" I think Outer Banks/Wildtrak/Base/etc. but as far as I know, that isn't known if all you have is the VIN.

There's tons of parts from suppliers that are different between a 2 door and a 4 door: glass and suspension parts and driveshafts and gas tanks and rear seats to name a few.
If Ford can't get increased production on all those those parts from all their suppliers then they can't increase...
This is what happens when you put a customer facing front-end on a back-end system that was never designed for customers to see. Your Bronco was a corner case that they probably decided wasn't worth the code to handle properly.
In my experience, that depends on the dealer. I spoke to a dealer that claimed that Ford wasn't taking orders for anything but 4-door 4-cylinder soft-top Broncos. I called another dealer and they were able to put in an order for a 2-door V6 with no trouble at all. I'm not sure if the first...
If you get a build date and the Bronco is ready then it means the dealer had an allocation.
If the dealer doesn't have an allocation then it won't get scheduled or built. Simple as that.
Be sure to get offers from Carmax/Carvana/Vroom/etc and either sell to the highest or use them as leverage against the dealer. The dealer will likely lowball your trade.
