I had a WaterPORT, but switched to a using a Rotopax with an electric water pump. Note: It isn't high pressure water, but great for filling up a bottle or cup.

Obviously the smaller diameter the wheel, the better for offroad. Now-a-days 17s are by far the most popular size, with a ton of different tire options. Tire size and tire options are crucial.

2.3 and 2.7l are rated at the same combined fuel economy when all else is the same, gearing, tire size, lift, etc.

That lift height is going to kill components as you are now experiencing.
My advice is to remove the lift.
2.5" over BASE is safe
Ford absolutely will not warranty that, nor should they.
You cannot increase your payload.
