Congrats. If your Rivian is a 4 motor edition I have a feeling if the software is tuned right you won’t be able to beat it as propulsion. However the Bronco will probably be more fun IMO. Looking forward to hear your thoughts.
I had Sun Tint in Austin do PPF on the front of my Miata. I don't know if they do full vehicles, but if they don't, I'm sure they recommend someone. I have trusted them with 6 of my vehicles and can fully recommend them for PPF and Tinting.
You can easily attach a 2.5lb extinguisher to the top of that molle panel. I had to take mine off after installing the slide out floor so can’t take a pic but I used the holder that came with the extinguisher and used 1/4-20 bolts to attach it.
I dropped mine too while installing hood struts. I gave up looking for it and figured it would show itself if it caused a problem or would fall out by its own. Been a thousand miles now and haven’t heard a peep out of it.

For the price, I don't think you can beat the Mabett v3 of their tailgate, it provides the most area for all your stuff and is a pretty solid unit. There are no holes to drill for the installation it uses existing holes on the tailgate door.
I am still digging it, I think where I have ended up will be a great setup for me and my dog. I need to get the platform for slide-out tailgate finished and then I think I'll be good.
Beyond keeping fuel inside the vehicle I think the most economical thing would be to get the Rock Slide...
