For us the front passenger side console was rough on the passengers left knee.
I've seen radios mounted on the rear side window shelf and long cable coming to the front for the mic connection. Usually with a rear mounted antenna. Also there may be room above the sun visor if you provide a mount...
Crash bars. Some Bronco models have them, Sasquatch does not. They are said to add safety from a front tire intruding into the passenger compartment due to a crash.
You did make a good choice and your plans for traveling with others is a great way to use your radio. About the only way to hear chatter is if you are in range of a GMRS repeater. Your radio is a great repeater radio so you can plan for the times you may be in a repeater area...
As long as your grounding spot/location is sized about the same as the wire needing to be grounded you are OK. Stacking ground wires to a chassis grounded bolt is fairly common assuming the chassis grounded bolt is not tiny. A couple 12 ga ground wires going to a 1/8 to 3/16 inch (or larger)...
Good job!
If you have not yet adjusted your braking cable, start with it long and make slow adjustments to shorten it. If it is too tight your tow vehicle will buck and bump when you do a fast stop. If you get that just loosen/lengthen the cable a little. Best wishes, this is a good system.
I don't have a clue as why some have them and others don't. The big tires don't fit with factory crash bars but there are Big Tire after market crash bars available if a person wants to add them.

We took our Mickey T Baja Boss AT's ( https://www.mickeythompsontires.com/light-truck-tires/baja-boss-a-t) on the Alpine loop of Colorado. Never lacked for traction. Actually surprised me with their ability to grip rock. The are about the same level of noise as the Goodyear Territory our SAS...
There will be a Bronco and driver combo that will claim the new rack is a band aid for their set up.
There's a person somewhere likes to dismantle bowling balls.
I just put it on today. So far no leaks! I've had it about 3 months and have read everything I can find. Pretty sure it is going to work just fine.
PS: Make a cardboard shield to extend down into a drain bucket. When you remove the original yellow drain plug the oil really shoots out...
Had a Ronin drain plug I wanted to install so drained oil last night and today put in 6 quarts.
Drove till hot, waited an hour and with our original dipstick FT4E=6750-BF, 6 qt showed just short of 1/2 way way on hatch marks.
Added .5 qt drove till hot and after 1 hour wait oil shows right at...

I've crawled around under our 2 door and think that you could possibly get a couple or so gallons with a custom tank. You would get more if you can sacrifice ground clearance. Badass tents and Trailraks has or will have side mount racks for Rotopaks. They both say it can be obtained as a stand...
