@WildOne I think that you can start with sand, too (it's not any more difficult than mud/ruts - rock-crawling is a different animal altogether, however); the important thing is to have other rigs out there with you, to help guide/recover you if you get stuck.
I have the in-vehicle bags, and to me they're sturdy/padded sufficiently to protect the doors, inside/outside of the vehicle; the in-vehicle bags are thus more versatile. Yes, the handles are strong enough to hang up the doors on the wall.
