I've been through there several times being from Kansas. Trust me, Nashville is the worst I've ever seen. The DOT emergency signs on the highway actually said, "EXPECT POTHOLES".

I've had 3 STi with Cobb. The first two were OTS maps. I'm currently at 174K miles, tuned since 2014 with 323 whp and 357 wtq. Nothing too crazy but plenty over stock. Drivetrain is all original.
I have a Cobb AccessPort in my car. But it's a pro tune. I have used their off the shelf tunes before which are more conservative for reliability sake but they are good tunes regardless.
Back when I was a aerospace inspector I used to test and review materials for aircraft parts. I looked at thousands of material certifications over the years. I don't remember ever failing ArcelorMittal material. So from personal experience, this sounds great to me.
Generally speaking, if you get a tune that is not from Ford, it will void the drivetrain warranty. If you remove the cats you'll need a tune anyway. And depending on the state you live in, you'll fail emissions if you remove them. Of course you could always swap out the exhaust for inspection...
