How about a dashcam mount/holder that screws into the mount on the dash (the one that is intended for GoPros)?
I have a Garmin Dash Cam and was looking for a mount so I wouldn't have to stick it onto the dash with its included adhesive. A screw-in mount would be the logical way to mount it.
Are you talking about the accessory rail for the dash? Like this:

If so, I have one of those you can have for the cost of shipping. You'll just want some new double-sided foam tape that is used to secure the two ends to the dash. I ended up going with a shorter version because I realized I've really only ever had one thing mounted at a time:

Your dash cam should have a standard 1/4”x20 threaded screw mount, but if not, look into an adjustable cellphone mount that would clamp the sides of the dashcam.

It's true, there's a 1/4" mount there, but from what I gather, the plastic trim piece the mount is attached to will pop out easily if you try to use just the mount threads without any other form of support.

Hence almost every mount solution that uses that either wings out very wide to spread the weight and offer support, or has some sort of double-backed tape to help secure it.

I’d like some better cover for the inside rear swing gate that looks great, keeps it from getting scratched, but maybe isn’t just a molle panel or tailgate table.

I thought about a cellphone mount but most of those are too big for the Garmin Dashcam, which is tiny.
I was just cleaning my office and found a cellphone mount that is small enough to fit a GoPro 4 without a case (2.36"). I'd say this mount can go as narrow as 2". Is your Garmin smaller than that?
