Any interior/upholstery shop should be able to wrap the door panel pieces in vinyl or leather to match the rest of your interior. The dash is doable but I could understand some shops not wanting to take that on (speaking from experience, I’ve wrapped a Bronco dash)
I am looking to change out my door trim pieces with extra material from alea leather. Do you have any videos, pictures, information that would help me out. I haven't been able to find any.

No pictures or videos that I took. The door armrests are easy as they are screwed from behind onto the door panel. The upper panels around the door handles are more involved as they are plastic welded on. They can be removed, I typically drill them out making sure you leave enough meat there to get a screw into it for reassembly.
It might be possible to wrap those upper panels without removing them entirely, and just trim and tuck the excess material around the panel. I’ve never tried it that way on those pieces specifically.
