This has a lot to do with it as well, a lot of my driving habits come from riding.
One thing I adapted to with the bronco is to downshift as I normally would but apply the brakes anyway since the engine braking sucks.
Vehicles now don't have a tow/haul or O/D off for non-tucks. The O/D off has been replaced with either just an "S" option or "M" for manual.
Most 1/2 ton trucks will still have it but not labeled, or you double click the button on the shifter like for the F150 column shifter.

Schematics and pics would still help, because it sounds like you're still going to have that issue assuming all your switches were in the off position.
