Just off the top of my head: You should be able to find a set SAS take-offs pretty easily on B6G. That will get you 35" tires and all you'll have to do is remove the crash bars. If you go bigger, you will need a lift. A word of caution, going with big tires, make sure you get the right lift...
I have the OEM steps and love them. Two cap screws and they come right off. Even came with plastic caps to plug the holes in the rail when the steps are off. Sorry, don't know the P/N but I'm sure your local FoMoCo parts guy can help.

I installed my Trektop on a rare 70-degree day back in Feb. It was "a real pill" to install the rear window the first time. I was in South Florida last week and taking the window on/off was a breeze. You just need to warm it up a bit. It won't be a problem after that.

If you've done it a few times, a minute or two. Not fun in the wind but with an extra set of hands not difficult. You (basically) drape it over the car and it has clips or hooks that grab onto the underside of the body panels and cinch up tight.
