All Model Year 21 (MY21) will be build in calendar year 2021. However, not all orders placed in calendar year 2021 will receive a MY21. That's probably the subtle distinction in wording from Ford rep.

I don't think height will be an issue. Not because people are all tall enough, but because the way a hood prop is designed, you have to lift the hood slightly before undoing the prop. So a shorter person wouldn't be able to use the hood prop anyway.

and this is only available on the Rubicon and the 392, so not nearly as flexible as what the Sasquatch package does for the Bronco trims.

edit: 5.13 1st gear ratio on the manual, 4:1 Rock-Trac low range ratio, combined with the 4.56 axle ratio, gives you a 93.5:1 first gear crawl, using existing gear box and parts bin transfer case. Definitely evens the playing field a bit...
The painted top that you are referring to is indeed a MY22 option(whether immediately available for MY22 or late MY22 is unclear yet), so ordering that will give you 0 chance of getting the vehicle in 2021. The MIC hardtop (available for MY21) seems to be the biggest constraint right now. If not...
On the Bronco, I wonder how strong the trail sights are, for fore-aft force. If the top of the brush guard/cattle guard/bull bar can be secured against the trail sight location, it should make it a whole lot stronger.

Yah, and if they do it like the Sasquatch package, where they include the 35" tires and both lockers, available on all trims, AND can deliver faster than the Broncos... then Ford is likely going to lose some (a lot of?) sales over this.
