The short trips are contributing heavily to the dilution, especially if you are not able to hit the highways for some extended driving at points in time. It takes a while on the highway to burn off the dilution and even then it does not fully disappear. The only cure is to change the oil.

All of the kits sold by Amsoil include fuel dilution testing. I would reach back out to Polaris/Horizon and ask what happened during the testing--alternatively, they may have left the number off the report.
So far, so good, but the next few UOAs on the oil will tell the tale. Given its construction, I think it will filter better than the OEM, but we need data to know for sure.
Cellulose is not as efficient as synthetic media and MC does not list their efficiency rating so you are left guessing at best as to how good or bad it is.
I have not priced an MC filter lately, but I am guessing that if they are cheaper than a FE, it would not be by much.
I know that my 2.7L has a lot of fuel dilution and so I use M1 ESP 0W-30 which has a pretty high viscosity and remains a 0W-30 despite the dilution.
The FRAM Endurance is (IMHO) the best filter on the market for the money. Hope this helps!
The Motorcraft PDS for the 5W-30 Synthetic Blend (which I assume is the factory fill) states that it starts at 10.8 cSt @ 100° C which, at 8.9 is really close to your calc (17.6% viscosity decrease in 1K miles).

If my initial UOA is an indication, MC is shite compared to something like an M1 ESP:
MC 5W-30 @ 1K miles & 2.5% dilution = 8.9 cSt @100° C OR a xW-20 viscosity
M1 ESP 0W-30 @ 4.5K miles & 5.0% dilution = 10.8 cSt @100° C OR a xW-30 viscosity
I do not believe that it does--especially given the details and requirements of the WSS specification that covers the oil. I bought the spec and was unimpressed--ANY API SN, SN+, or SP oil that is GF-6 exceeds the requirements.

I have never found a place where they publish the efficiency ratings for any of their filters and none of their filters list ISO 4548-12 test results. Amsoil did some testing a few years back and the FL-820s was 20 microns @ 93.7%--plenty of other filters that blow those results away.

With the fuel dilution happening in Ecoboost engines, the oil will need to be changed long before 20K miles--more likely far less than 10K miles. A UOA using gas chromatography is the only way to check the fuel concentration which would not be a concern in a 2002 Ranger.
