Some BLs have leather seats / carpet floors. Others have MGV seats / rubber floors. If you're driving / parking near mud or snow, the rubber floors are a must-have. I'm not sure, but I believe that BDs offered fabric / carpet or MGV / rubber, so there too make sure you get what you want.

Clearly you must be trail-turn-assisting wrong. Seriously, though, does your Bronco have diff-locks? If I don't turn mine on while going uphill in snow, it does the same as you describe. It's an open-diff 4x4, not a snow cat... unless you lock 'em. Then it's more like a husky.

There is nothing wrong with those tires! They are perfectly capable of driving you to the shop to install the tires you want. That is their purpose. It reminds me a bit of a monster truck traveling on normal wheels/tires and then changing out at the destination.

That looks great! I like the fenders. Did you run into any problems with the center brake mount? I'm concerned about clearance for that.
