Give how many screwed up and screwy electrical issues I've seen caused by aftermarket remote starts, and alarm systems. I tend to agree. An additional fob, that disables one of the features I wanted, and risk of electrical gremlins is a no go for me.

Not having cooled seats is similarly limited by the washdown convenience. Cooled, or ventilated as they are currently called, seat require holes to let the air flow. Not exactly conducive to washdown.
I have the leather trimmed seats and I haven't noticed an abnormal amount of swampiness. That being said I frequently leave the windows cracked to reduce the oven effect of a closed car. Only on occasion have I used the remote start to cool the car.

You may not be the litigious type but it sounds like they are hoping like hell you give up and go away. As others have mentioned it sounds like it's time to involve a lawyer. Especially if they haven't refunded your deposit.
