I do have a roof rack so I'm hoping it is something simple like waiting in line at the shop to get that installed and they had to notify the shipper it isn't ready to head out yet ... do you have anything extra like that maybe?

I am going to say that date doesn't mean "nothing" ... something they are doing in their system is triggering a date change. It probably doesn't mean anything substantial, but it means they are doing something in their system that is causing the sticker to regenerate with the date the system...
