I doubt that is going to work for the Jeep - the new screen is vertical while the original Jeep screen is horizontal. There will be no software update from Jeep to make the system use that screen properly.
The easiest way to compare would be to look at Jeep's real numbers. On the Jeep forums, a stock Rubicon is getting about 18-19 combined and a stock Sahara or Sport gets maybe 20 -21 combined (same engines) I think you will see a similar penalty with Bronco between standard BL and Standard OB...
I would be worried if Ford was being irresponsible and rushing to keep the original start date, but they seem to be taking their time to get everything right even in the midst of the pandemic. If anything, the build quality will be better because everyone is focused and taking nothing for granted
