Wanna know a secret? People in Chicago don't actually eat deep dish . . . at least not on the scale all the food shows on TV would lead you to believe. The overwhelming most popular style of pizza here is known as tavern or party style - it's a thin crust and it's cut into squares. The joy of pizza is eating pizza (duh!) and one slice of a deep dish can fill you up. With tavern pizza you just keep going back for those little squares and drinking beer and the eating experience continues without feeling like you just dropped a gut bomb. Sure we occasionally eat deep dish but mostly when someone comes in from out of town and wants to go to that place they saw on the Food Network or something or (back when this was a thing) we would be in those things called "offices" and a vendor/supplier would come in to do a presentation and pop for lunch. The people doing the presentations were usually from out of town and either wanted deep dish themselves or thought that's what we always ate. Not a great picture but here's what pizzas look like from one of my favorite local places, Flo & Santo's. Can't wait until I can get together with friends again there and rip through some pizzas and beer . . . and their famous pork wings.
