I'm starting to wonder, keep in mind I'm one 35's, doing typically 80 down the highway and getting 18.2 mpg at best.
Really has me asking, how slow do you people drive to get 21,22, 25mpg?
Based on miles and time to drive, I figure OP was mostly under 60mph each trip.

correct, I was not in a hurry and we wanted to enjoy the scenery. Never did over 70; mainly 60-65 the whole way. It was a great trip to the Porcupines... Highly recommend that area!

When on the highway I usually keep speeds to 70-75 mph. One day I got 29 mpg but that was on two-lane passes and through Yellowstone Park where you can rarely go over about 40 mph it also had more downhill then uphill for the day.

Confirmed- I keep it slow in my 2 door Sas with 2.7 I average 22.7 driving with a feather foot and keeping to speeds of no more than 70 on the interstate- which is mostly flat here in FL. Even at 70 it's within only 20 MPH of the Bronco's top speed, which is 100 I believe. At 80 you are only 20 MPH within the top speed.

Off topic although with almost 27 MPG in a Bronco with the 2.3 it is possible then in a Ranger 2WD to get 30 or more? We need a small truck with our Bronco and an every day commuter for me for a 80 mile a day commute- thinking of Ranger or Maverick.

2D BB 7MT. Calculated MPG (~.7 mpg below displayed): 27 best, 21 worst, 23.5 avg. Highly impacted by driving style and conditions. This is my latest: front panels off entire time & hardtop off for about 100 miles. 26 calculated (I suspect fuel economy better with top on).

I'm only halfway through my first tank after my first week of ownership. Showing 15.7 mpg so far. And I'm babying it, following the usual engine break-in period dos and don'ts. Definitely no full throttle pulls yet.
