To do the full interior package with orange stitching there are also a center console armrest cover and interior door panels, correct?

That's a good approach! Also you could try a plastic welder / iron to flatten out the wound and then spot spray with some black textured paint. A ceramic coating on top of the flares might slightly reduce their tendency to get very minor gouges.

Something nobody has mentioned: the alternator in the 2.3 is placed much higher than on the 2.7, because the 2.3 is a purpose-built, rugged engine, whereas the 2.7 and 3.0 are shared with other on-road vehicles. Evidently this minor detail is well known by those who spend a lot of time in Baja...

Looks great! I did the same thing with Plastidip glossy black. I put garbage inside the wheels to protect the brakes and masked the faces of the wheels. Came out looking the same. Cost was $20. Very easy to touch up, and most importantly, no anxiety about whether I would snap a torx bolt.
