I have low ceilings like yourself and went with a simple setup 4 ratchet straps at each corner and screw eye into the ceiling at these points. Agree with the trail sight mount. I was thinking some sort of hood rack with a crossbar from trail sight to sight and another quick mount point on the area closer to the windshield. You’d have to remove it to pop the hood, but it could be useful for thin profile gear perhaps?
