There's going to be that humidity in a car whether the top is down or up. There are vents, a car isn't a sealed system.
For sure, but it damn sure ain't when you leave the top down during overnights. Dew settles everywhere. Moisture wreaking havoc for hours on in is prime culprit. Daytime is one thing, sun and heat dries things out, but not night time.

Nope, there is no moisture smell my bronco seems to be sealed well. I have left the top down several nights over the summer but never in rain.
That’s probably it. Even if it doesn’t rain, you get morning dew.

Just like when you get the first tee time in the morning and you go get in the cart and the seat is wet. And the morning grass is wet.

Exactly. When I took delivery of mine, it already had some rust underneath. It sucks, but you have to baby this vehicle and not leave it exposed to the elements more than you have to.

Ice/Mud Mountain unit sitting outside for XX months?
Not relevant. I live in the rust belt and don't garage my vehicles. This is more than just condensation on the headrests which would be the only culprit from ice or mud mountain. It has to be salt spray from the ocean.
We get salt spray from the roads here but not on the interior surfaces.

Pretty normal given every Ford we have owned looks like that, other than the chromed headrest post. My 5 year old Super Duty looks exactly like yours under the dash.

My 17 month old Bronco is starting to show the surface rust, but not near as bad as yours.

Hard to grab decent pictures in the dark. My vote is the top down doors off in the ocean spray/mist zone accelerated things.

Better yet, how about when you get in your vehicle first thing in the morning. Nice 60° weather, humid, and off to work, off to the lake, golf course or whatever, and before you can leave you have to turn on the windshield wipers cause of the moisture covering it. And not just your windshield, but your hood and fenders are all wet. And it did not rain one drop overnight. And yet with that top down do you really think morning dew is prejudice only to exterior only? Just saying......

Spray it with fluid film and wipe it down.

Your profile pic is a hardtop but you commented about leaving your top down at the beach (not off) and "rust dripping from the soft top joints". You have a hardtop and soft top? Just curious since this post just seems very odd (as you've probably noticed from the majority of comments).

Is there any way that the vent system is stuck on "recirculate"... and its keeping humidity trapped in the vehicle.
