Had an older roommate years ago who drove a little Suzuki Samarai and was country AF. He was also an avid gamer, and had this off road race game on PS2 that was so awesome. We used to play it all the time. So much fun! And I'm not a gamer by any means.

- You can probably go safely up to 38's with just max tire kit and portals; above that, you'll probably need to trim the pinch weld since the scrub with the wider tire will get to it. It wasn't a lot, I don't think. The thread linked above has pages about that...
Ask a question about that specifically. @Aonarch was just talking the other day how's he's doing an overlanding build. The 2.5 Foxes or Kings seem like they could help, but I would just be guessing given the variables and my limited experience.
You're also doing overland, right? I'm trying to setup more for rock crawling/trails. The 6100's are definitely part of my thought process, certainly if I just want a little bit of lift for 37's (which I don't even know I want either).
